I am making:

Starter:

Wild Mushroom and Roasted Garlic Soup with Rye Croutons and Herbed Sour Cream

Main plate:

Filet Mignon with Whiskey Peppercorn Sauce

Salt Roasted Herbed Fingerling Potaotes

Roasted Carrots, Zucchini, Califlower and Pearl Onions with a light Balsamic Glaze

Salad:

Orange, Red Onion and Avocado Salad with Pomegranate Vinaigrette

Dessert:

Chocolate Peppermint Pots de Creme in Vanilla Tuille Cookie Cups

And of course I've got the 7 different types of Jul cookies all good Norwegian women make this time of year! I always make some very simple and some "fancy" cookies and will keep 7 kinds on hand all the way through the Jul season. We currently have Oatmeal, Chocolate Chip, White Chocolate Cranberry, Espresso Thumbprint with Caramel filling and Chocolate Drizzle, Snowball Surprise, Peanut Butter and Snickerdoodles.

This is a Nordic Heathen household and this is only the 5th of our 12 days of Jul. Most of the housemates have been slowly trickling out of the house the past couple days to visit friends or family, so for tonight's dinner I only have my boyfriend (who is visiting from Finland for a few weeks), another couple who are also expats from a Nordic country and myself to worry about. If there were more of us, I would have done a standing rib roast instead. (and I'll probably do one in a couple days because we like it) The 12th day of Jul I'm making Turkey, Ham, Beef Tenderloin, Salmon, Leg of Lamb and a bunch of undetermined as yet sides and desserts. However, there will be slightly over 100 of us gathering for that, so I HAVE to cook big. Good thing I love to cook, no? ☺

Spaghetti- I'm at home with my kids my family did Christmas last week. They had ham and all the works minus the mashed potatoes which I've (and a few other family members) formally filed a complaint about lol.
