Good lively ones like these should do the trick
Hark the herald angels sing
The holly and the ivy
Good king wenceslas (sp?)
It came upon a midnight clear
If you can include Christmas songs as well as carols try these
We wish you a Merry Christmas
Rudolph the Red Nosed Reindeer
Santa Claus is coming to town
Have fun!

I don't like most of them, since they've been done to saturation. Try finding some older carols (as in mideval), or translations of French or Spanish carols.
My favourite is The Carol of the Bells but I realise you need a trained choir to pull that one together...but you did ask...

Silent night is a fave. yet with the aid of the years, countless performers have accomplished marvelous issues with a particular carol. case in point: Barbara Streisand's wacky version of "Jingle Bells" is nutty and joyous. Placido Domingo making a track "O Holy night" is wealthy and severe. Judy Garland's "Have your self a Merry Little Christmas" is gorgeous and particularly unhappy. John Denver and the Muppets having a ball with "The 12 Days of Christmas" is an absolute hoot. Jim Brickman is a pianist and does a large job together with his track, "The present".

I'm dreaming of a white Christmas, just like the ones we used to know. When the tree tops glisten and children listen and sleigh bells ringing in the snow...

"Hark the Herald Angels Sing" is one of my favorites. All 3 verses really get into the meaning of the holiday.

"O Holy Night" and "O Tannenbaum" are my favorites , but I would also include a couple of upbeat ones, like Sleigh Ride or Jingle Bells.
